Taigun is a new looking sushi restaurant located in a strip mall across the street from Broomfield's Flatirons Crossing mall. Taigun is a nice looking restaurand. I am not a fan of overly loud restaurants and the noise level in Taigun was just about right. I was there with some friends and we were able to comfortably hear each other talk. The decor seems too fit the place. Service was prompt and our server seemed to be knowlegable about sushi.
Unfortunately my favorite, Mirugai(Giant Clam) is not on the regular menu and was not on the list of specials for the night. As I perused the specials list I saw Aji-no-tataki or fresh Mackeral. Mackeral is a strong oily fish and one of my favorites.
The Aji-no-tataki was absoulutely perfect. The presentation was spectacular and the fish itself even better. The Aji came as sashimi in a rectangular dish filled with ice. Mackeral is typically served marinated in vinegar with lemon, finely diced scallions and a tiny bit of horseradish. Taigun was no exception and the mackeral was served with all of the expected accompaniments.
On top of the ice, the mackeral head, bone and tail were curved and pinned in place by a bamboo skewer. It was so beautiful I almost regretted that we were going to eat it. I say almost because the taste was unbelievable. The Aji was milder than the marinated version but it still had a distinctive taste. My list of favorite sushi items has a new member: live giant clam, live scallop, philadelphia rolls and now Aji-no-tataki.
As much as I enjoyed Taigun, I can only give it a good rating. The rest of our sushi order was only fair. The fish was reasonably fresh but not special. The rolls were very good and innovative but the tuna on top of the signature Broomfield roll seemed to be slabs and not formed into the roll as I often see in other sushi restaurants. The portion of rice on the nigiri seemed small and overpowered by the fish.
Taigun was spectacular in some areas but average in others Sushi Pilgrim does not award half rice bowls or Taigun's rating would be higher. Next time I am in town — I will be back.
